Method for Thin Chocolate Wafer Cookies
Prep Notes: Preheat oven to 350 degrees. Have on hand: parchment paper, mixer, baking sheet sprayed w/ cooking spray.
3 1/2 sticks butter
2 cups sugar
3 cups flour
1 1/2 cups dark cocoa
1/2 tsp salt
1/2 tsp baking soda
6 TBSP milk
2 tsp vanilla
In large bowl, cream together butter & sugar until light and fluffy (about 3-5 minutes). Set aside.
Step two: In large bowl, sift together all dry ingredients – flour, dark cocoa, salt, and baking soda. Set aside.
Step Three: In small bowl, mix together milk & vanilla
Step Four: Add dry ingredients to the creamed mixture. Use low mixing speed to blend. When incorporated, add the milk mixture. Mix just until smooth. This is your dough.
Step Five: Form dough into a log (perhaps the circumference of a quarter). We prefer to roll dough in parchment paper. Refrigerate until fully chilled and firm. Then slice into thin wafers and place on prepped baking sheet. Bake at 350 degrees for 6-8 minutes
Side notes: These wafers can be frozen. And you can freeze the dough log and slice & bake at another time
