Rabbit Hill Inn White Chocolate Lemon Bar Recipe

Lemon White Chocolate Squares RecipeCalling all lemon lovers, this is “must-do” recipe! These White Chocolate Lemon Bars are insanely good (and addictive). The flavors of lemon and white chocolate are a heavenly match. And this recipe brings them together in delicious balance.

Make double batches – your friends will be begging for more! Remember, they freeze well.

Preparation Note: Have parchment paper, cooking spray, and half sheet pan on hand.

Ingredients:
1 cup unsalted butter, softened
2 cups sugar
4 eggs
4 Tbsp lemon juice
2 Tbsp lemon zest
3 cups flour
2 tsp baking powder
1/2  tsp salt
1 1/2 cups white chocolate morsels
1 cup whole milk

Step one:  Pre-heat oven to 350 degrees
In large bowl, cream together milk, butter and sugar. Add eggs, one at a time. Beat in lemon juice and zest. Scrape bowl..

Step two:
In a medium bowl, sift dry ingredients. Toss with white chocolate chips.

Step three:
Alternate wet and dry ingredients into a creamed mixture until just incorporated. Spread on parchment lined & sprayed half sheet pan (17×12).  Bake at 350 degrees for 30 minutes or until bars spring back to touch.

Step four: While baking, make Lemon glaze.
Lemon Glaze Ingredients:
1 cups confectioners sugar
4 Tbsp lemon juice

While bars are still warm, pour glaze over bars. Cool and cut.

**  These delicious bars may be frozen (line container with parchment).
