Maple Panna Cotta
Serves 8


Ingredients:

¼ cup maple sugar
2 ½ cups heavy cream
1 Tbl powdered gelatin dissolved in 3 Tbls cold water
1/8 cup white sugar
  • Bring heavy cream and both sugars to a scalded stage.
  • Whisk in dissolved gelatin.
  • Fill eight 4-ounce ramekins 2/3 full with cream and gelatin mixture.
  • Refrigerate until set.
To Plate:
  • Unmold panna cottas by running a warm knife around the edge of the ramekins.
  • Tip upside down on a dessert plate and garnish with fruit and whipped cream.
