| Hot Cocoa Tart |

Ingredients for the Crust: 4 oz unsalted butter ½ cup sugar 1 egg 1-½ cups sifted cake flour ¼ cup cocoa |
Ingredients for Filling: ¾ cup heavy cream ¼ cup sugar 1/3 cup milk 6 oz semi-sweet chocolate, chopped 2 eggs |
| For the Crust: Mix together sugar and butter. Add the egg and continue to mix. Add in flour and cocoa and mix until it forms a ball. Roll out and put into ten 3 to 3 ½ inch tart pans that have been greased. Prebake for 5 minutes at 325° F. |
| For the Filling: Bring heavy cream and milk to a boil. Remove from heat and stir in chocolate. Mix sugar and eggs in a separate bowl. Stir in the chocolate mixture. Pour into the prebaked shells and bake at 325° F just until set. Let cool slightly, then turn out while still warm. |
