Horseradish & Pancetta Potato Salad Recipe

Horseradish & Pancetta Potato Salad Recipe – Yields 2 quarts


2 lbs. blanched, julienned red bliss potatoes

1 cup cooked pancetta, diced small

1 cup onions, diced small

1/3 cup celery, diced small

½ cup chopped chives

1 Tbls minced garlic

3 oz Dijon mustard

1-cup mayonnaise

¼ cup horseradish

1 Tbls salt

1 tsp black pepper


  • Combine the vegetables and potatoes in a large bowl and toss.
  • In a separate bowl, mix together the second set of ingredients.
  • Add the mayonnaise mixture to the potatoes, then incorporate everything together well.
  • Chill until ready to serve or to desired temperature.
