Just A Little New Year Message...



This was our 16th New Year's Eve celebration at Rabbit Hill Inn. As always, the house was happily full. Many of our guests have been welcoming the New Year at RHI for several years (10 - 20 years for some). Others experienced their first RHI New Year celebration. In a blink of an eye, they were warmly welcomed to joined in the fun. It's often been said, "New Year is a 3-4 day event at Rabbit Hill Inn". It's true. It's more than just champagne and a fun party on the 31st (and it is ALL that!). More so, it's a very special experience, where guests unwind and reflect on the year past, celebrate the incoming New Year in style, and then savor their getaway time with relaxed anticipation of the year ahead.

From morning to night, the common rooms are filled with genuine conversation and laughter. Yet, quiet and relaxed moments magically appear too. Friendships, old and new, are nurtured and enjoyed. It's not intrusive or "too much". It naturally is "just right" for each one's desire. Do I dare say " perfect"?

From our perspective, this warm ambiance is exactly what Rabbit Hill Inn is all about. Here, it doesn't take a holiday to create such a setting. It just happens organically - every day. And for this, we are so very grateful. Thank you for helping us create this chemistry that sets RHI apart from so many others. You help us make this dear home the special place that it truly is.

Terrific Holiday Cookie Recipe - Quick, Easy, Oh So Delicious!

Maple Apple Cranberry Cookies

Yield: 2 dozen. They freeze well too!
Preheat oven to 350 degrees

2 eggs (well beaten)
1/2 cup Crisco (melted)
1 Tbsp maple extract
1 cup flour
1 tsp baking soda
1 tsp baking powder
1/2 cup apples (peeled, cored and chopped)
1/2 cup dried cranberries
add any other dried fruit or nut desired

Mix dry ingredients and set aside (flour, baking soda, baking powder)

Pour beaten eggs in separate mixing bowl. Add melted Crisco and extract. Mix well.

Add dry ingredients to egg mixture.

Fold in apples and cranberries

Prep cookie sheet with lining of parchment paper or coating of cooking spray

Drop dough by teaspoon onto cookie sheet

Bake at 350 for 10-12 minutes

Take a covered bridge tour. Everyone always says..."we just have to see some covered bridges while we're here!" And it's true - covered bridges are a trademark of Vermont. These amazing structures are a unique feature of the Vermont landscape, taking us back to a distant time and place. And there are more covered bridges per square mile in Vermont than any other place in the world, with 107 authentic covered bridges located throughout the state. In nearby, New Hampshire, there are several others to see. A photographer's delight, for sure.

WOW! America In The Morning Radio covers Pink Slip Getaway Giveaway



What a thrill! We got a call from the producer of the Jim Bohanon Show/America In The Morning - Westward One's award-winning radio news magazine. The show broadcasts from Washington D.C. and is syndicated across the US.

They heard about the "Pink Slip" Giveaway and wanted to share the story with their nationwide listening audience. The piece aired in a few time slots and before you know it, we heard from folks from Scranton, PA to Las Vegas, NV. It was an amazing opportunity, for sure. Rabbit Hill Inn is giving away (6) two-night getaways to couples dealing with the anxiety of unemployment. Why? Because we are tired of all the negative news! As unemployment rates are skyrocket, we asked ourselves, "How can we make a difference?" We can't change the economic climate, but we can soothe the souls of others who find themselves suddenly caught up in the nightmare of job loss.

We know first hand the challenges of being unemployed. For a few years, back in the 90's, we were in the same boat. We remember the intensity of that stress and its effects on a relationship so our compassion goes out these people. A relaxing getaway is needed now more than ever. They may have the time, but not the money.
