WINTER DOESN'T LAST FOREVER!!

Just A Little New Year Message...



This was our 16th New Year's Eve celebration at Rabbit Hill Inn. As always, the house was happily full. Many of our guests have been welcoming the New Year at RHI for several years (10 - 20 years for some). Others experienced their first RHI New Year celebration. In a blink of an eye, they were warmly welcomed to joined in the fun. It's often been said, "New Year is a 3-4 day event at Rabbit Hill Inn". It's true. It's more than just champagne and a fun party on the 31st (and it is ALL that!). More so, it's a very special experience, where guests unwind and reflect on the year past, celebrate the incoming New Year in style, and then savor their getaway time with relaxed anticipation of the year ahead.

From morning to night, the common rooms are filled with genuine conversation and laughter. Yet, quiet and relaxed moments magically appear too. Friendships, old and new, are nurtured and enjoyed. It's not intrusive or "too much". It naturally is "just right" for each one's desire. Do I dare say " perfect"?

From our perspective, this warm ambiance is exactly what Rabbit Hill Inn is all about. Here, it doesn't take a holiday to create such a setting. It just happens organically - every day. And for this, we are so very grateful. Thank you for helping us create this chemistry that sets RHI apart from so many others. You help us make this dear home the special place that it truly is.

Terrific Holiday Cookie Recipe - Quick, Easy, Oh So Delicious!

Maple Apple Cranberry Cookies

Yield: 2 dozen. They freeze well too!
Preheat oven to 350 degrees

2 eggs (well beaten)
1/2 cup Crisco (melted)
1 Tbsp maple extract
1 cup flour
1 tsp baking soda
1 tsp baking powder
1/2 cup apples (peeled, cored and chopped)
1/2 cup dried cranberries
add any other dried fruit or nut desired

Mix dry ingredients and set aside (flour, baking soda, baking powder)

Pour beaten eggs in separate mixing bowl. Add melted Crisco and extract. Mix well.

Add dry ingredients to egg mixture.

Fold in apples and cranberries

Prep cookie sheet with lining of parchment paper or coating of cooking spray

Drop dough by teaspoon onto cookie sheet

Bake at 350 for 10-12 minutes

BIG NEWS! Travel + Leisure Magazine lists Rabbit Hill Inn - TOP 100 HOTELS WORLDWIDE!

It's been way too long since our last blog entry. August was an exciting month for us here at Rabbit Hill Inn. In the next few entries, we'll try to catch up a little. Here's our first big big story...

Rabbit Hill Inn is ranked among the TOP 100 HOTELS WORLDWIDE by Travel + Leisure Magazine! And rated #1 country inn in the United States!

The August issue of Travel + Leisure reported the results of their 14th annual survey of the top 100 hotels worldwide... and there we were, with a handsome score of 91.19. It placed us #52 on the list. Needless to say, we were thrilled.

To make things even more exciting, this score put Rabbit Hill Inn in the number-one position among all inns and small hotels in the United States. Only three U.S. country inns made it onto the esteemed Travel + Leisure List.

We are very proud to be in such fine company with the most distinctive hotels, resorts, and inns worldwide! Knowing that chateaus, safari clubs, and island resorts were included in the list, it's quite a humbling notion to be ranked among the best in the world. The spotlight shines brightly on this sweet inn in this tiny village. Our sincere thanks to Travel + Leisure and their readership for this amazing honor.

Try This Delicious Summer Soup Recipe!

Guests were tapping on the kitchen door last night asking for the recipe. So here it is... an easy breezy summer dish.


Strawberry Champagne Soup with Basil Goat Cheese Puree
(To serve 4)

Ingredients for Soup:
1 quart fresh strawberries
1 cup apple juice
1/2 cup champagne
1 small shallot, diced
Black pepper to taste

Method for Soup:
De-stem strawberries. Wipe with damp cloth. Cut in halves
Put in blender with other ingredients
Puree on high, 1-3 minutes
If you have many seeds, strain well.
Set aside, keeping chilled.

Ingredients for Puree:
1/2 cup fresh basil
1/4 cup of goat cheese (cut into small chunks)
Vegetable stock or water. Just enough to blend till smooth
Salt and pepper to taste

Method for Puree:
De-stem basil.
In boiling salted water, blanch basil for 30 seconds
Place basil in strainer. Drop in ice water to shock and stop cooking
Drain and put in bowl.
Add goat cheese, salt and pepper. Toss well.
Put all ingredients in blender. Puree until smooth. Add vegetable stock or water as needed for
desired consistency.

Plating:
Pour soup into chilled bowls. Drizzle with basil puree. Enjoy.
